Shopping for Trail Mix Ingredients

Two OLS students pose in an aisle of Fred Meyer showing the ingredients they've gathered in their shopping cart.Each fall the Nutrition, Health, and Fitness course prepares a trail mix for the residents of Camp Unity Eastside, an organization that relies on donations from the community. This activity helps OLS students connect with their community and understand how they can give back to that community and those in need.

Students enrolled in the course went to the local Fred Meyers to shop for ingredients. In preparation for the activity students discuss basic nutrition principles by identifying nutrient-dense foods, interpret and apply food label information to make healthy choices, and create menus that align with nutritional guidelines. They applied these principles while shopping for ingredients and prepared the following recipe:

  • Raw almonds
  • Cashews (salted or unsalted)
  • Banana Chips
  • Oyster Crackers
  • Dried cranberries
  • Dark chocolate chips

Directions: Combine ingredients in a large bowl and stir until evenly distributed. Place in air tight container. Mix will stay fresh for several weeks.

Students also deliver the trail mix to the camp and take a tour to learn more about Camp Unity Eastside and the impact it makes for it’s residents.
